Makes 4 servings
6 chicken thighs, boneless, skinless and sliced into medium size
5 garlic cloves, minced
2 stalks scallion, cut into 1 1/2-inch length
1 big onion, sliced into medium size
1 tbs oyster sauce
2 tbs soy sauce
1 tbs sesame oil
1 tbs Shaoxing wine
1 tsp sugar
1) Marinate the chicken overnight in the refrigerator with the marinade.
2) Heat up pan over medium heat. Add 2 tbs canola oil. Add garlic and saute until fragrant.
3) Add marinated chicken and stir-fry with high heat until it turns a little brown. Dish up and set aside.
4) Add onion and stir fry with high heat for 2 mins. Add chicken and oyster sauce. Stir well. Add scallions and stir for 1 min. Serve.
