
Ingredients
2 cloves garlic, minced
150 g red onions, diced
100 g chicken, finely diced
1 tsp turmeric powder
1/2 tsp cumin powder
500 g potatoes, peeled, boiled until soft and mashed
1 tsp salt
1/2 tsp pepper
3 eggs, beaten for eggwash
300 ml oil for frying
Method
1) In a pan, add oil and saute garlic and onion over high heat. Add chicken and stir well. Add turmeric and cumin powder, salt and pepper. Stir-fry ~5-8 mins or until chicken is cooked.
2) Add potatoes, mix well and turn off the heat. Allow mixture to cool before forming into 2-inches patties.
3) In a wok, heat oil until very hot. Dip each patty in egg before easing into the hot oil. Allow 3-5 mins for each side before turning (it is done when golden brown). Remove from oil and drain on paper towels. Serve.
