! recipe for sourdough english muffins:110 grams sourdough, 160 gr. all purpose flour, 100 gr whole wheat flour, 276 gr milk
… mix everything and let it rest 8 hours or overninght.and the next morning:

add 75 gr flour, 3/4 teasp..salt, 1 teasp. baking soda, 1teasp. and 1/2 honey and mix with the other dough, about 7 or 8 min.,——————————————————————————–
be carefull cause it´s so sticky, and opposite to what i read it never stops asking for more flour, maybe there´s something i´m doing wrong, anyway i´m kinda used to it,
the dough is like a lil´monster asking for more and more flour… add only a lil´and keep on kneading… let it rest about 1:30 minutes, make about 8 or 9 balls and give them a muffin shape, i do it with my hands, ( i have to try the method of rolling the whole dough into a large sheet and cutting the muffins with some cutter, glass or something so that they are perfectly round. My next muffins will be made this way), do some marks with the fork and put in the pan about 4 minutes each side.
recipe for the orange kitty cookies: zest of 2 oranges, juice of 1 orange (135ml) (this is my adapted version with the exact amounts so that you don´t fail!), same amount olive oil (135ml), same of sugar ( 135g.), 1 tablespoon milk, 2 egg yolks, 10gr. baking powder, 400gr. flour+3 tablesp., some vanilla extract if you have

- mix orange juice+oil+yolks+sugar.
-mix flour+baking powder and add the liquids mix, you will see it has an oily texture.
-let it rest on the fridge for a while, i like to leave it about 2 hours.
-give the cookies the shape you like the most and cook on a hot oven, 180-190º about 15 minutes.
