Keroppi and Keroleen’s Kitchen: Spinach Stuffed Chicken Breast

Friday, May 23rd, 2008

Hi! Keroleen here! I’m in a cooking frenzy now. Heehee. It’s really fun to cook. ^_^ Here’s another recipe perfect for any occasion.

1 (10 ounce) package fresh spinach leaves spinach chicken

1/2 cup sour cream

1/2 cup shredded pepperjack cheese

4 cloves garlic, minced

4 skinless, boneless chicken breast halves - pounded to 1/2 inch thickness

1 pinch ground black pepper

8 slices bacon

Preheat the oven to 375 degrees F (190 degrees C).

Place spinach in a large glass bowl, and heat in the microwave for 3 minutes, stirring every minute or so, or until wilted. Stir in sour cream, pepperjack cheese, and garlic.

Lay the chicken breasts out on a clean surface, and spoon some of the spinach mixture onto each one. Roll up chicken to enclose the spinach, then wrap each chicken breast with two slices of bacon. Secure with toothpicks, and arrange in a shallow baking dish.

Bake uncovered for 35 minutes in the preheated oven, then increase heat to 500 degrees F (260 degrees C), or use the oven’s broiler to cook for an additional 5 to 10 minutes to brown the bacon.

Strange Weather

keroppi rain

The weather is strange now. It’s supposed to be hot, but almost everyday it rains in the afternoon, then it will be warm again the next morning. I don’t know if I going to wear a jacket or a light summer shirt. So this is what’s been happening to our climate. Ribbit!

When it comes to rain, I’m happy since I like the wet season. But the sudden change within the day is also bad. It actually makes a lot of people and animals sick. As for the plants, it may have both good and bad effects.

It’s not just rain we are experiencing, other parts of the globe have fearsome tornadoes and typhoons. A soft drizzle or shower  is fine but strong winds, heavy rains and flood waters are scary. Ribbit!

Our environment is drastically changing. We should do something about it before it’s too late or else we will no longer have a planet to live in.

Once in awhile, the residents of Donut Pond do some outdoor cooking. Grilled Burgers should always be in the menu. It’s everybody’s favorite. Here’s a nice recipe the everybody will definitely love and is very easy to make.

Anyway, thank you Keroppi for that special birthday bash! I met a lot of new friends and a lot of girls of course. *wink* Ladies, ladies, please line up, there’s a lot of autographed pictures of myself for everyone! *shows off his most debonair smile*

Keroppi sure has become more handsome from the last time we saw each other. He’s the second most handsome frog in Donut Pond and I’m the first. *shine*

Well, time for me to go. Swimming time. I always keep myself and shape. *wink*

Thank You Keroma

Monday, May 12th, 2008

I’m so thankful to Keroma. She taught me everything that I know when it comes to cooking. I really idolize her. She’s the epitome of both a mother and a woman.

So patient, kind and wise yet she still has that commanding aura. It’s really amazing how one woman can handle a family of 5, plus the whole Frog Gang. I really appreciate that she allows us to hangout at the house even though we are not blood relatives. She even treats us like her own children and not just mere guests.

When I have my own family, I want to be like her and when it’s my children’s turn to have their own families, I want to pass a lot love and knowledge to them.

I love you Keroma, I really appreciate all the good things you have taught me. Thank you for all your love.

Happy Mother’s Day!

Sunday, May 11th, 2008

keroma This entry is a tribute to my mother, for all the love, care, lessons and sacrifices that she gave me and my siblings. Without her, I wouldn’t be here and I wouldn’t be the kind of frog I am today.

She may be strict at times, but I know that it’s for a good reason. No matter how hard-headed I am at certain occasions, I always end up following her advice. I’m so thankful that she’s my mother. Ribbit!

She’s also the perfect cook, far better than Keroleen. With her magic touch, she makes the best food ever! Who would have thought that a simple riceball could actually give me a boost of energy. Never happened with the riceballs from other establishments, but with Mama, her food always makes me happy and energetic. Ribbit ribbit!

An Apology for Mimmy

Tuesday, May 6th, 2008

I didn’t mean to hit your guitar. I was just so excited to see you. *hem hem* I hope nothing bad happened to you and your guitar. I’ll be more gentle with my movements from now on. Sometimes in my excitement, I do things that offend or even hurt people. I really need to straighten my act up. I’m really sorry! *cough cough*

Please accept this as my sorry gift. *croak*

Happy Birthday Kyorosuke and Denden!

Saturday, May 3rd, 2008

Let the party begin!!!

Today is the start of Kyorosuke and Denden’s joint birthday celebration. You know how parties are in Donut Pond, it usually lasts for more than a day. Anyway, let us all wish them a Happy Birthday!

I know it’s really hot these days so the pond is open for everyone to swim. One important rule though, NO THROWING OF FOOD, DRINKS, TRASH IN THE POND AND AROUND THE AREA! If you feel that you can’t finish your food and drinks, just get what is right for you first. You can go back for more later. Remember, a lot of people and animals are starving. As for your trash, there are designated trash bins around the area.

Alright! Ribbit! Everybody is all set! PARTY TIME!!!
